Biográ's natural gum has been made following a traditional Japanese formula. Once the sesame seeds have been selected, they are roasted together with grains of unrefined sea salt. Finally the mixture is finely ground to promote the intake of the active principles of sesame. Sesame in its natural state provides a large amount of protein (24%), lecithin, unsaturated fatty acids, minerals (calcium and phosphorus). In Japanese gastronomic culture, gum is considered one of the most alkalizing condiments.
