Soy lecithin is a complex mixture of phospholipids and triglycerides obtained from soybean oil. The most common phospholipids in this mixture are phosphatidylcholine and phosphatidylethanolamine, although the phospholipids inositol, serine, and phosphatidic acid are also essential. Phospholipids are the basic cell block, while cell membranes are made of them. Lecithin is most famous for its ability to form transport lipoproteins, which enables it to reduce blood cholesterol levels, protecting the body from atherosclerosis and fatty liver. Contains choline, an essential compound for the proper functioning of the restless system and predecessor of acetylcholine.
