Purple yam root can be used for different dessert recipes and to flavor various delicacies such as cakes, cupcakes, cookies, pies, rolls, smoothies and ice cream. The exact place of origin is unknown; it is believed that the common yam comes from the islands of Indonesia. The tubers are usually bright lavender, hence the common name, but can sometimes be white. Sometimes it is confused with the taro and the sweet potato of Okinawa (Murasaki-Imo). The purple yam has a mild sweet taste. Purple and blue foods are an excellent source of nutrients. These foods get their color from the antioxidant Anthocyanin. They are nutritionally similar to other types of potatoes; they are rich in carbohydrates but low in protein and fat.
